The first espresso that turned me to drinking Flat whites and Cortados was a Mexico, and this one definitely continues that love.

Mexican coffee beans express a wide range of flavors, but you can often find notes of chocolaty sweetness and subtle spices. From the first sip it has this subtle but juicy citrus that wakes up your tastes buds and then jumps into a sweet chocolate, caramel, and roasted chestnut that compliments it beautifully. It’s accompanied from beginning to end with this soft creamy mouthful that lingers with a sweet mallow. Imagine the most perfect marshmallow for a smores and you’ve got it down perfectly. This coffee is going to do great things on espresso in our cafe’s, by itself and paired with milk.  I’m hoping you enjoy her as much as I do, enjoy!

Coffee arrived in Mexico in the late eighteenth century, and today it is grown across sixteen states, with most production concentrated in the south. Chiapas, one of the country’s most important coffee regions, offers ideal conditions for specialty coffee cultivation. Flanked by the Atlantic and Pacific Oceans and shaped by the Sierra Madre de Chiapas mountain range, the region experiences steady rainfall, rich soils, and high elevations that support vibrant flavor development. This lot comes from smallholder farmers in the municipalities of Chicomuselo and Comalapa. Farms in this area are often modest in size, and producers process their own coffee using traditional methods. Cherries are pulped at home, fermented in small tanks, and dried on patios or rooftops to preserve character and clarity. The result is a washed SHG EP coffee with clean, sweet structure and a strong connection to place. SHG stands for “Strictly High Grown,” indicating that the coffee was cultivated at elevations above 1200 meters above sea level.
